Sushi!

Fifteen global foods entered, and one left. After two weeks and hundreds of votes, fans of the Pardee School of Global Studies on social media picked sushi as 2015’s top global food.

Sushi won the final round against Mexico’s guacamole, with 62% of the vote.

To celebrate, here are some tasty sushi facts:

  • Sushi is most commonly associated with Japan, but dates all the way back to the second century A.D. in China.
  • The word sushi does not refer to raw fish, but to the seasoned rice. Raw fish served by itself is referred to as sashimi.
  • Sushi as it is often recognized today – a piece of raw fish atop a hand-packed pellet of rice – was invented by a chef in Edo (present-day Tokyo) named Hanaya Yohei in the 19th century. Today, this is still referred to as Edo-mai, or Edo-style sushi.
  • California Rolls were invented in the 1970s in the Kaikan Restaurant in Los Angeles, California.
  • The largest maki, or rolled sushi, is served at a restaurant in Anjo City, Japan. It weighs 13 pounds, is eight inches thick, and costs over $200.
