Food Allergies

Our commitment

Boston University Dining Services is committed to providing students, faculty and guests with the information you need to make informed food choices. We employ a full-time Director of Safety and Sanitation who oversees continuous training of our staff and have registered dietitians available to meet with individuals to discuss dining safely on campus. We want to make dining at BU as easy and enjoyable for you as possible. If you have any questions, please speak to a manager at any BU dining location.

Allergen Guide

Although our team reviews each recipe, the possibility for cross-contact in a largely self-serve community setting does still exist. Due to the nature of open kitchen environments, we cannot guarantee that any food item will be completely free of a specific food allergen. If an allergen-free choice is required, guests should contact the Sargent Choice Nutrition Center.

Gluten and nut-free pantry

Gluten and nut-free pantries are free of gluten, peanuts and tree nuts. They are located at the three Fresh Food Company Dining rooms. While other allergens are present in the pantries, they contain individually packaged foods and condiments that are useful to students managing severe food allergies. True Balance

Our True Balance station is designed specifically for guests who are allergic to one or more of the most common food allergens. It’s easier to make appropriate meal selections here as
our chefs prepare carefully crafted, flavorful recipes while focusing on guest safety, never sacrificing flavor. Stop by and enjoy dining without restrictions.

The recipes served at True Balance are specially selected, reviewed, and vetted by a team of experts. We only use products with ingredient statements that exclude all of the following:

  • Eggs
  • Milk
  • Peanuts
  • Tree Nuts
  • Fish
  • Shellfish
  • Soy
  • Wheat
  • Sesame
  • Gluten


Sean Favreau
Director of Safety and Sanitation

Sean Favreau has been the Director of Safety and Sanitation at Boston University since 2012. Working closely with the Boston Health Division of Inspection Services, Sean oversees the inspection of all Dining locations across campus, including City Convenience stores. In addition to being a certified AllerTrain trainer, throughout the year, Sean leads training in Servsafe, TiPS certification and Chokesaver to BU Dining employees at Boston University. Sean has BS and AAS degrees from Johnson and Wales University and works with the Sargent Choice Nutrition Center to identify students’ allergen needs. You can contact Sean here.
