Executive Chef Armand
Executive Chef Armand earned his ProChef Level II certificate from the Culinary Institute of America (CIA). The ProChef program acknowledged Chef Armand’s expertise in culinary arts, personnel management and financial administration. Qualities he brings to the team at Boston University Dining Services every day.
By completing ProChef Level II, Chef Armand received hands-on skill validation, recognition of his professional achievements and the credentials to advance his culinary career with the Boston University Dining Services team.
Chef Armand’s test was a four day process that required the creation and development of multiple menus, with an emphasis on taste, texture, and flavor, and the successful completion of several written exams. “It’s an intense process that really allows you to present your culinary skills in depth,” said Chef Armand. “For example, on day one, I spent five hours baking different items that I then presented to judges. Day two I produced a three-course meal using specific ingredients from the Mediterranean – this menu was then judged on flavor, culinary technique from the region, presentation and more.”
“Passing this exam was definitely a personal goal of mine. For an organization like the CIA to recognize the skills I have in the kitchen, it is very validating,” said Chef Armand. “I spent hours perfecting skills, playing with flavors and learning new techniques that I’m excited now to put to work in the kitchen at Marciano.”
