Liz Sauter

Liz Sauter is a licensed, registered dietitian nutritionist with a Bachelor’s Degree in Nutritional Science from Boston University. Liz joined the SCNC in 2015, and recently completed an MPH at Boston University’s School of Public Health.
Liz specializes in food-related medical conditions including, but not limited to: irritable bowel syndrome, celiac disease, food allergies and intolerances, inflammatory bowel disease, and gastroesophageal reflux disease. She provides individual counseling on the FODMAP diet, gluten-free diet, and other elimination diets, helping to maximize food variety and nutritional adequacy while minimizing symptoms.
At Boston University, Liz collaborates with BU Dining Services and BU Disability & Access Services to ensure students with food-related medical conditions have access to nutritionally balanced meals. Liz provides trainings to all students requiring access to the gluten and nut-free pantries, and reviews the gluten-free cycle menu to help ensure meals are nutritionally balanced and gluten-free. Liz also trains students requiring special meal accommodations due to multiple food allergies and intolerances. She is available to meet with students individually as needed.
Liz teaches Healthy Cooking on a Budget, a one-credit course offered to Boston University students. Liz helps students learn how to identify, purchase, and store healthy ingredients in a cost-effective way. Each class emphasizes a skill for slicing, dicing, and prepping for healthy meals.
Liz also provides supervision and mentorship to undergraduate and graduate nutrition students and dietetic interns.
