Why We Chose This Recipe
Here’s a recipe for a quick, delicious strawberry salsa! This salsa is bright, summery, and the perfect side for chips or topping for a salad. Easy to assemble and perfectly suited for dorm living!

Yield: 3 cups
Ingredients
- 2 cups strawberries, diced
- ½ cup red onion, diced
- 1 lime, juiced (or 2 tablespoons lime juice)
- ¼ cup fresh cilantro
- Optional: 1 jalapeño, diced and seeds removed
- Tortilla chips or cinnamon-sugar pita chips for dipping
Directions
- Mix the strawberries, red onion, and cilantro in a large bowl
- Add lime juice and toss to coat
- Garnish with cilantro, if desired, and serve

- Easy storage with an airtight container and have your chips ready on the side to assemble
Tip:
- Strawberries can be substituted for mangos, pineapple, or almost any other fruit!
- Add 2 teaspoons of Tajin for a more flavorful salsa!

- One student suggested adding mango to the recipe to introduce more flavor diversity.

- Consider opting for whole-grain chips, which offer added fiber to help keep you feeling full and support digestion.
- Students can either freshly squeeze lime juice or save time and money by using store-bought lime juice.
What We Liked
- The balance between the strawberry and cilantro created a pleasant yin and yang of flavors.
- The lime juice complemented the strawberry beautifully, adding brightness to the dish.
- We preferred chopping the strawberries as finely as possible to give the dish a more salsa-like consistency.
- Students enjoyed the optional jalapeños too—they added a nice kick!
