Yield: 2 cups
Ingredients
- 1 can Black Beans
- 1 cup fresh Corn
- ¼ Red Onion, minced
- 1 tomato, diced
- Juice from 1 lime
- 3 tbsp minced Cilantro
- 1 clove Garlic, minced
- 1 Avocado, cubed
- Salt and Pepper to season
- Crackers & veggies to dip
Directions
- Combine black beans, corn, red onion, tomato, lime juice, cilantro, garlic.
- Fold in avocado chunks so they do not get mashed.
- Season with salt and pepper and let dip sit in the fridge for 2-3 hours.
