Why We Chose This Recipe
This roll-up is fresh, filling, tasty, and easy to make. It is energizing, provides fiber, and is the perfect meal prep recipe for lunch, snack, or dinner!

Ingredients
- 4 large whole wheat tortillas
- 1 cup hummus
- 2 bell peppers (any color), sliced into matchsticks
- 2 medium carrots, shredded or sliced into matchsticks
- 1/2 cup baby spinach leaves
- 1/2 cup purple cabbage, sliced thin or shredded
- 1 can black beans, rinsed and drained
- Feta cheese (optional)
Directions
- Spread about ¼ cup hummus over each tortilla. Leave room along the edge.
- Arrange the beans and veggies on the tortillas. Sprinkle with cheese (optional).
- Roll up each tortilla tightly.
- Cut crosswise into pinwheels and serve.

Suggestions
- Try using other variations of beans, like cannellini or chickpeas, according to your preference.
- Use vegetables you already have on hand. For example, cucumbers, tomatoes, and arugula would pair well with hummus.
