Why We Chose This Recipe

Making these wasabi cucumber bites packed with sushi-inspired flavors can be a dorm-friendly snack that is easy to assemble! With a spicy kick from wasabi and a creamy filling made from plant-based ingredients, they are light, flavorful, and perfect for a quick snack or party.

Yield: Approximately 24 cucumber bites

Ingredients

  • 1 cup canned chickpeas (drained and rinsed)  
  • 1 medium or large cucumber, cut into 1/2-inch slices 
  • 1 teaspoon wasabi paste
  • 1/4 avocado 
  • 1 tablespoon finely chopped green onion/scallion
  • 1 teaspoon white or black sesame seeds   

Directions

  1. Using a small spoon or melon baller, scoop out a shallow indent in the center of each cucumber slice without cutting through, to create an indent for the toppings. Place the slices upside down on a paper towel to drain any moisture while preparing the other ingredients.
  2. In a medium bowl, mash the chickpeas with a fork until smooth but slightly chunky. Mix in the wasabi paste, avocado, and green onion until well combined. Taste and adjust the ingredients to your preferred taste.
  3. Scoop a small spoonful or about 1/2 tablespoon of the filling into each cucumber slice. Slightly mound the mixture for a neat presentation.
  4. Sprinkle each cucumber bite with sesame seeds. Serve immediately or refrigerate.

Recipe Notes

  • This recipe has been modified to create a vegetarian-friendly version by replacing the chicken with mashed chickpeas, which provide a similar texture and plant-based protein.

          Suggestions

          • The filling can be prepared a day in advance and stored in the fridge. Cucumber slices can be prepped a few hours ahead of time.
          • Enjoy with crackers, flats, or chips on the side to add some crunch and energy-providing carbohydrates.
