In the latest installment of Mama Meals, our new video cooking series where students prepare a dish that reminds them of home—with the help and under the watchful eye of family members, Zoom-style—Riaz Butt-Garcia (CAS’22) prepares Honduran spaghetti, a dish with many counterparts throughout Central and South America and in nearby island nations such as Haiti. The dish is not only inexpensive, it’s easy to make and can feed up to four. Given that it has two starches—rice and pasta, it’s also quite filling.
Butt-Garcia’s take on Honduran spaghetti uses spaghetti and rice as the base, topped with a sauce of sliced hot dogs, sliced onions, tomato sauce, tomato paste, and crema. Riaz’s mother, Lesley Garcia of Revere, Mass., usually adds green peppers as well, but since her son is not a fan—no peppers here. And a unique twist to this popular meal that makes it uniquely their own? A splash of Coca Cola, adding an extra dollop of sweetness.
Honduran Spaghetti
Cooking time: 35 minutes
Serves: 4
Rice and Pasta
- 2 cups cooked rice
- 8 oz. spaghetti
Sauce
- 4 hot dogs, sliced into ¼ inch pieces
- ½ a large white onion, sliced
- 15 oz. canned tomato sauce
- 6 oz. canned tomato paste
- 10 oz. crema (Butt-Garcia prefers Quesos La Ricura Crema Salvadorena)
- 6 oz. Coca-Cola (preferably Mexican Coca-Cola, available at most large supermarkets)
Cook the rice using your preferred method, or refer to this useful guide.
To cook the pasta, bring a large pot of water to a boil. Season the water with salt. Add spaghetti, and cook for the time recommended on the package (typically 8 minutes). Once cooked, strain the spaghetti and set aside.
In a large pot, add one cup of water and one to two tablespoons of oil and bring to a simmer. Add sliced hot dogs, tomato paste, and tomato sauce. Mix together. After 5 minutes, add onions and 8 ounces of crema to the pot. Add spaghetti, and mix with the sauce. After 2 minutes, add Coca Cola and the remaining 2 ounces of crema. Cook spaghetti and sauce together for 5 to 10 minutes.
To serve, put a half cup of rice on a plate, and fill the rest of the plate with the spaghetti and sauce.
