Project Eden, Inc. is a small non-profit organization that was started in 2002 to address the need for education and better nutrition in the rural Honduran population. After 10 years, gardens are producing crops, trees are bearing fruit, and students are attending Universities. Other large “World Hunger” organizations don’t operate here. There is no other help. In the San Francisco de La Paz area, there are still malnourished children, parents who can’t read or write, and families that don’t know where the next meal will come from.
• Practicum position description
Project Eden is seeking a highly motivated individual to work both abroad and domestic to aid in improving the health outcomes of expecting mothers and their children. The malnutrition levels in Honduras are staggering and the program seeks to address the health disparities that are unaddressed in expecting mothers and infants.
• Student responsibilities and scope of work
While in Honduras, the intern will work alongside clinicians, physicians, and expecting mothers to determine what services expecting mothers are lacking. Intern will collect data regarding mother’s weight, mother’s nutrition, mother’s smoking/drinking status to use to develop an effective program to help address health outcomes in expecting mothers and their offspring. Upon returning from Honduras, the intern will bring findings and suggestions to the Project Eden Board upon their return to the U.S. and write a grant to garner funding for a nutritionist to help improve mother and child health in San Francisco De La Paz.
• Minimum or preferred skills needed by student
Student should be proficient in excel, word, PowerPoint
Fluent/proficient in Spanish
Preferably an IH or Maternal Health Major
Desire to improve health, education, gender disparities

Housing and meals would be provided in Honduras. Field supervisor will accompany student from airport in Tegucigalpa to San Francisco De La Paz. The Project Eden executive board will provide a travel stipend to the intern.

• Is a car essential for completing the project?
Travel would be required as part of this practicum. The student(s) would be expected to travel to Honduras to obtain interviews with expecting mothers and their primary care physicians. The intern will be accompanied at all times by one or two of the designated field supervisors.
