Three Easy, and Budget-Friendly, Recipes

One of the realities BUDC students quickly notice is how difficult it can be to cook for themselves. When you’re working 30 hours and taking classes three nights a week, it can be difficult to find time to cook. In addition, you will also want to explore all of the great cuisine that DC offers. However, you will eventually have to start cooking for yourself, especially if your budget is limited. Below are some easy meals that you can cook for yourself.

Bagel Omelette Sandwich (Serves 1 person for breakfast)

Ingredients:

  • Bagel (1)
  • Milk (1 tablespoon)
  • Eggs (2-3)
  • Bacon (2-3 slices)
  • Mushroom (1-2 pieces)
  • Baby spinach (10 pieces)

    A bagel omelette sandwich is a great way to fill you up in the morning. It goes great with yogurt, blueberries, and granola too!

Instructions:

  • Defrost bagel before place in toaster.
  • Crack and mix eggs. Add milk during process.
  • Cook bacon. Remove grease before adding mushrooms.
  • Add eggs and spinach into pan.
  • When omelette is finished, serve on bagel.

Pad Thai (Serves 1 person for lunch/dinner)

Ingredients:

  • Rice Noodles (1 packet)
  • Garlic (1.5 cloves)
  • Eggs (2-3)
  • Soy Sauce (2.25 tablespoons)
  • Lime Juice (2.5 tablespoons)
  • Brown Sugar (5 tablespoons)
  • Fish Sauce (1.5 teaspoons)
  • Onion (1 quarter)
  • Peanuts (1 quarter to 1 half cup)
  • Chili Powder (3 teaspoons)
  • Cilantro (1/8 cup)
  • Chicken (1 cup)

Instructions:

  • Boil pot of water and cook rice noodles for six minutes. Set aside noodles when finished to cool down.
  • Mix soy sauce, lime juice, brown sugar, fish sauce, and chili powder together. Set aside.
  • Cook chicken (or meat of your choice) and peanuts together. Add eggs after and stir.
  • Add rice noodles and sauce into pan and mix ingredients together. Add onions before finishing.
  • Top with cilantro and serve.

Stir Fry (Serves 1 person for lunch/dinner)

Ingredients:

  • Rice (2 cups)
  • Broccoli (1/2 head)
  • Baby Bella “Cremini” Mushrooms (3-5 pieces)
  • Baby Spinach (1/8-1/4 bag)
  • Chicken (1-1.5 cups)

    Your stir fry is not limited to chicken. Feel free to use shrimp, bacon, or whatever else you can think of.

Instructions:

  • Boil pot of water (1.5 to 2 cups of water for every cup of rice). Add rice and stir for 30 minutes (can change depending on temperature; I’d recommend starting out high and decreasing slowly to prevent rice from sticking to the pot).
  • Cook chicken and broccoli together. Add mushrooms and spinach later as they cook more quickly. You can add spice (e.g. curry powder, smoked paprika, ancho chili pepper) to give your food a kick.
  • Serve rice, meat, and vegetables together.
