She kindly welcomes the BU community to test new Sargent Choice recipes while we eat, talk and play Bananagrams.<\/em><\/p>\n<p><em> <\/em><\/p>\n<p><em>Check out the <a href=\"http:\/\/www.bu.edu\/nfc\/calendar\/\">Sargent Choice event calendar<\/a><\/em><em> and joins us next week!<\/em><\/p>\n<p>At the last KJ SC Test Kitchen, we revamped our typical sushi night and held an Asian inspired food celebration! \u00a0We made Karen\u2019s famous California sushi rolls (with brown rice), miso soup and even dim sum.<\/p>\n<p>Note: Whole-grain dim sum wrappers were not available. Although the dim sum recipe does not get the complete Sargent Choice stamp of approval, the vegetables and refined grains still offer beneficial nutrients.<\/p>\n<p><strong> <\/strong><\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/blogs.bu.edu\/sargentchoice\/files\/2012\/11\/sn.png\"><img loading=\"lazy\" class=\"aligncenter size-full wp-image-4610\" src=\"http:\/\/blogs.bu.edu\/sargentchoice\/files\/2012\/11\/sn.png\" alt=\"\" height=\"346\" width=\"601\" \/><\/a><\/p>\n<p><strong>Benefits of the traditional Asian diet<\/strong><br \/>\nStudies show that the traditional Asian diet can prevent disease and improve overall health. Renowned Registered Dietitian and NYU professor Marion Nestle told <a href=\"http:\/\/www.hyphenmagazine.com\/blog\/archive\/2012\/07\/rice-nice-marion-nestle-science-calories\">Hyphen magazine<\/a>:<\/p>\n<p><em> There are lots of examples of best possible diets, and Asian diets are one of them: lots of rice and vegetables, a small amount of meat, little sugar. Just eat that,<\/em><\/p>\n<p>Take a look at Oldways Asian diet pyramid <a href=\"http:\/\/oldwayspt.org\/resources\/heritage-pyramids\/asian-diet-pyramid\/overview\">here<\/a><\/p>\n<p><strong>Plant-Based<\/strong><br \/>\nThe Asian diet pyramid is high in nutrient-dense plant foods including fruits and vegetables. In addition to fruit and vegetable consumption, seeds, legumes and nuts are eaten on a daily basis. Susan Lang, a writer for <a href=\"http:\/\/www.livestrong.com\/article\/484226-dietary-habits-of-asian-population\/?utm_source=undefined_R1\">\u201cCornell Chronicle\u201d<\/a> explains:<\/p>\n<p><em>The traditional, plant-based rural diets of Asia (are) linked to much lower rates of certain cancers, heart disease, obesity and other chronic diseases than those found in the United States.<\/em><br \/>\n<a href=\"http:\/\/blogs.bu.edu\/sargentchoice\/files\/2012\/11\/sn22.png\"><img loading=\"lazy\" class=\"aligncenter size-medium wp-image-4612\" src=\"http:\/\/blogs.bu.edu\/sargentchoice\/files\/2012\/11\/sn22-300x255.png\" alt=\"\" height=\"255\" width=\"300\" \/><\/a><\/p>\n<figure id=\"attachment4611\" aria-describedby=\"caption-attachment4611\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/blogs.bu.edu\/sargentchoice\/files\/2012\/11\/sn2.png\"><img loading=\"lazy\" class=\"size-medium wp-image-4611\" src=\"http:\/\/blogs.bu.edu\/sargentchoice\/files\/2012\/11\/sn2-300x257.png\" alt=\"\" height=\"257\" width=\"300\" \/><\/a><figcaption id=\"caption-attachment4611\" class=\"wp-caption-text\">Top: Chive and pumpkin dim sum Bottom: Cabbage and Shiitake mushroom dim sum<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p><strong>Low in sweets and sodium<\/strong><br \/>\nTraditional Asian diets are lower in salt and sugar than the typical Western diet. This is largely due to the Western diet containing more processed foods and desserts than Asian populations.<\/p>\n<p><strong>Whole grains and rice<\/strong><br \/>\nWhole grains and rice are major staples in traditional Asian cuisine and are generally eaten daily in controlled portions.<\/p>\n<p><strong>Lean Meats<\/strong><br \/>\nOne of the biggest differences between the Asian diet pyramid and the Western diet is the consumption of meat protein. American dishes tend to place meat at the focal point of a plate, where many Asian dishes feature grains and vegetables as the star of the meal, with small portions of lean meat protein acting to highlight the vegetables and grains or to add a touch of flavor to the dish.<\/p>\n<p><strong>Physical Activity<\/strong><br \/>\nOne of the most important attributes of the Asian diet pyramid is physical activity. Asian populations are generally more active in their daily lives than Americans. For example, most of the population walk or ride a bike to work or school. This high level of physical activity is also believed to contribute to the low incidence of chronic diseases seen in Asian populations. In fact, physical activity is the base of the <a href=\"http:\/\/oldwayspt.org\/resources\/heritage-pyramids\/asian-diet-pyramid\/overview\">Oldways Asian diet pyramid<\/a>.<\/p>\n<p>To make your own Asian-inspired dishes, see SC\u2019s Dim Sum recipe <a href=\"http:\/\/blogs.bu.edu\/sargentchoice\/2011\/04\/15\/dim-sum-test-kitchen\/\">here<\/a> and our SC Vegetarian Brown Rice Sushi recipe below.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Sargent Choice Vegetarian Brown Rice Sushi<\/strong><br \/>\nYield 2 servings, 6 rolls each<\/p>\n<p><strong> <\/strong><\/p>\n<p><strong>Ingredients<\/strong><br \/>\n2\/3 cup dry short-grain brown rice<br \/>\n1-cup water<br \/>\n1-teaspoon water<br \/>\n2 teaspoons light soy sauce<br \/>\n2 tablespoons seasoned rice vinegar<br \/>\n1-teaspoon wasabi powder<br \/>\n2 (8 \u00bc by 7 \u00bc -inch) sheets roasted nori (dried layer)<br \/>\n\u00bd Kirby cucumber, peeled, seeded, and cut into 1\/16-inch thick matchsticks<br \/>\n\u00bd medium carrot, cut into 1\/16-inch-thick matchsticks<br \/>\n\u00bd small California avocado, peeled and cut into thin slices<br \/>\n\u00be ounces radish sprouts, roots trimmed<br \/>\n6 ounces firm tofu, cut into several long pieces<\/p>\n<p><strong> <\/strong><\/p>\n<p><strong>Directions<\/strong><\/p>\n<p>1. Prepare brown rice as directed with 1 teaspoon soy sauce<\/p>\n<p>2.\u00a0While rice is standing, stir together vinegar and remaining teaspoon soy sauce<\/p>\n<p>3. Transfer rice to a wide, nonmetal bowl and sprinkle with vinegar mixture. Toss gently with a large spoon to combine. Cool rice, tossing occasionally, for about 15 minutes.<\/p>\n<p>4.\u00a0Stir together wasabi and teaspoon of water to form a stiff paste. Let stand for at least 15 minutes to allow flavors to develop.<\/p>\n<p>5.\u00a0Arrange 1 sheet of nori shiny-side down on a sushi mat lengthwise. With damp fingers, gently press half the rice onto the nori with a 1 \u00be-inch border on the farthest edge.<\/p>\n<p>6.\u00a0Starting 1-inch from the side nearest you, arrange half the cucumber matchsticks, carrot matchsticks, avocado slices, and tofu pieces in an even strip horizontally across the rice (You may need to cut pieces to fit). Repeat with half the radish sprouts, letting some sprout tops to extend beyond the edge.<\/p>\n<p>7.\u00a0Roll the bottom edge of mat toward the top edge while holding the filling in place and pressing firmly to seal roll.
