The pudding is filling, delicious, and has a delightful vanilla fragrance!<\/p>\n<h4><strong>Chia Seed Pudding<\/strong><\/h4>\n<p><em>Recipe adapted from loveandlemons<br \/>\n<\/em><em>Yield: Approximately 2 cups\u00a0<\/em><\/p>\n<h4><strong>Ingredients<\/strong><\/h4>\n<ul>\n<li>1\/4 cup chia seeds<\/li>\n<li>1 cup milk (or plant-based milk, such as soy)<\/li>\n<li>1 tablespoon maple syrup (or sweetener like honey or sugar, adjust sweetness to taste)<\/li>\n<li>1\/2 teaspoon vanilla extract<\/li>\n<li>Fresh fruit for topping (such as berries, sliced bananas, or mango)<\/li>\n<li>Optional toppings: nuts, coconut flakes, granola, or a sprinkle of cinnamon<strong><br \/>\n<\/strong><\/li>\n<\/ul>\n<h4><strong>Directions<\/strong><\/h4>\n<ol>\n<li>In a mixing bowl or a mason jar, combine the chia seeds, milk, maple syrup, and vanilla extract. Mix thoroughly.<\/li>\n<li>Cover the mixture and refrigerate for at least 4 hours, preferably overnight. This allows the chia seeds to absorb the liquid and swell up, forming a pudding-like consistency.<\/li>\n<li>Once set, stir the pudding again to break up any clumps. Fiber helps with digestion and promotes a feeling of fullness.<\/li>\n<li>Chia Seeds are also rich in calcium, phosphorus, and potassium. Calcium is needed for muscle and nerve activity, blood clotting, teeth, and bones. Phosphorus is a component of bones, teeth, and substances involved in energy formation.
