These Chocolate Chia Oatmeal Cups are for you! With a few simple ingredients, this recipes packs lots of nutrition into a bite-sized snack.<\/p>\n<p><u>What Makes it Healthy?<\/u><\/p>\n<ul>\n<li>The oats are whole grains, which are rich in healthy carbs, B vitamins, and fiber. This will help give you energy and keep you full.<\/li>\n<li>Chia seeds are a source of omega-3 fatty acids, which have anti-inflammatory and heart-healthy benefits.<\/li>\n<li>Even the chocolate \u2013 in the form of cocoa powder \u2013 adds some antioxidants which keep your body functioning well.<\/li>\n<\/ul>\n<p><u>Tips and Tricks<\/u><\/p>\n<ul>\n<li>If you don\u2019t have a muffin tin, you can add a little bit of extra oats and let the mixture absorb more of the liquid. Then it can be formed into cookies!<\/li>\n<li>Speaking of which, you can let the mixture chill in the fridge to allow the oats to absorb the liquid. This is a helpful trick when working with whole grains to make them softer.<\/li>\n<li>Since we had leftovers (for breakfast the next morning!), we found that these go really well with nut butter! You can experiment with adding in nut butter or chopped nuts before baking, or do what we did and spoon some on top.<\/li>\n<\/ul>\n<p><strong>Chocolate Chia Oatmeal Cups<br \/>\n<\/strong>Recipe modified from Olive Tree Nutrition<br \/>\nYield: 12 muffins<\/p>\n<p><strong>Ingredients:<br \/>\n<\/strong>3 cups old-fashioned rolled oats<br \/>\n\u00bc teaspoon salt<br \/>\n1 teaspoon baking powder<br \/>\n3 tablespoons chia seeds<br \/>\n2 eggs<br \/>\n1 cup milk<br \/>\n\u2153 cup honey<br \/>\n2 tablespoons cocoa powder<br \/>\n\u00bc cup mini chocolate chips<br \/>\nCooking spray<\/p>\n<p><strong>Directions:<\/strong><strong>\u00a0<\/strong><\/p>\n<ol>\n<li>Preheat oven to 350\u2070 F.<\/li>\n<li>Spray a 12-cup muffin tin with cooking spray. Set aside.<\/li>\n<li>Stir together oats, salt, baking powder and chia seeds in a medium-sized bowl. Set aside.<\/li>\n<li>In another medium to large bowl, whisk 2 eggs together.
