Although we\u2019re nearing the end of the summer season, we were still able to incorporate some summer veggies like corn and radishes into the meal. It was great seeing everyone after a summer break, and meeting new friends! We hope to see the Test Kitchen family grow even more this semester.<\/p>\n<p><strong>What we liked:<\/strong><\/p>\n<ul>\n<li>The corn relish was perfectly sweet and savory<img loading=\"lazy\" width=\"215\" height=\"155\" class=\"wp-image-4776 alignnone\" style=\"margin: 0.5em 0px 0.5em 1em; outline: #72777c solid 1px; height: 287px; text-align: left; color: #333333; text-transform: none; text-indent: 0px; letter-spacing: normal; font-size: 16px; font-style: normal; font-variant: normal; font-weight: 400; text-decoration: none; word-spacing: 0px; white-space: normal; max-width: 100%; orphans: 2; float: right; -webkit-text-stroke-width: 0px;\" alt=\"\" src=\"\/scnc\/files\/2019\/09\/test-kitchen-9.4-6-477x636.jpg\" \/><\/li>\n<li>It was easy for everyone to assemble their tacos just the way they liked with various different toppings \u2013 great for entertaining!<\/li>\n<li>The protein from the black beans and the fat from the avocados and cheese made this meal very filling and satisfying<\/li>\n<li>Great for leftovers; Many students took home leftover corn relish and beans to put on top of a salad or rice the next day<\/li>\n<\/ul>\n<p><b>What we would change<\/b><\/p>\n<ul>\n<li>The jalapenos made the corn relish a little too spicy for some. If you\u2019re making tacos for other people, serve them on the side!<\/li>\n<li>We added more cumin to the black beans, as well as paprika and a pinch of cayenne pepper to give them more flavor<\/li>\n<li>We used canned sweet corn instead of ears of corn to make it easier<\/li>\n<\/ul>\n<p><strong>What you\u2019re getting from this meal:<\/strong><\/p>\n<ul>\n<li>Protein from the black beans<\/li>\n<li>Insoluble fiber from corn that aids digestion and keeps you regular<\/li>\n<li>Calcium and vitamin D from the feta cheese<\/li>\n<li>Healthy, monounsaturated fat from avocado<\/li>\n<\/ul>\n<p><strong>Try these zesty modifications:<\/strong><\/p>\n<ul>\n<li>Add chicken, lean ground beef, or tofu for even more protein<\/li>\n<li>Make it a burrito bowl! Use brown rice or quinoa as your base, and add your toppings from there<\/li>\n<\/ul>\n<p><b>The recipe<\/b><\/p>\n<p>Adapted from\u00a0Cookie and Kate<br \/>\nPrep Time:\u00a020 mins<br \/>\nCook Time:\u00a015 mins<br \/>\nTotal Time:\u00a035 minutes<br \/>\nYield:\u00a010\u00a0tacos<\/p>\n<h4>Corn and feta salad<\/h4>\n<ul>\n<li>2\u00a0ears of corn, shucked (about\u00a02 cups fresh corn kernels)<\/li>\n<li>1\/4 cup\u00a0chopped cilantro<\/li>\n<li>3\u00a0medium red radishes, thinly sliced into small strips<\/li>\n<li>1\u00a0medium lime, zested and juiced (to yield about\u00a01 teaspoon\u00a0zest and\u00a02 tablespoons lime juice)<\/li>\n<li>1\u00a0medium jalape\u00f1o pepper, seeded and minced<\/li>\n<li>1 tablespoon\u00a0olive oil<\/li>\n<li>1\/4 teaspoon\u00a0sea salt<\/li>\n<li>1\/2\u00a0to\u00a02\/3\u00a0cup crumbled feta, to taste (optional)<\/li>\n<\/ul>\n<h4>Black beans<\/h4>\n<ul>\n<li>2\u00a0cans black black beans, rinsed and drained (or\u00a03 cups cooked black beans)<\/li>\n<li>1 tablespoon\u00a0olive oil<\/li>\n<li>1\u00a0small yellow or white onion, chopped<\/li>\n<li>1 tablespoon\u00a0ground cumin<\/li>\n<li>1\/3 cup\u00a0water<\/li>\n<li>Salt and black pepper, to taste<\/li>\n<\/ul>\n<h4>Everything else<\/h4>\n<ul>\n<li>10\u00a0small round corn tortillas (gluten\u00a0free for gluten-free tacos)<\/li>\n<li>1\u00a0large avocado, sliced into thin strips<\/li>\n<li>Optional garnishes: pickled jalape\u00f1os, salsa verde and\/or hot sauce<\/li>\n<\/ul>\n<p><em>To prepare the corn salad:<\/em><\/p>\n<p>Use a sharp chef\u2019s knife to slice the kernels off all four sides of the corn cobs. Transfer the kernels to a medium-sized mixing bowl and add the chopped cilantro, radishes, lime zest and juice, jalape\u00f1o, olive oil and sea salt. Mix well. Stir in 1\/2 cup crumbled feta, taste, and add a little more if you\u2019d like. Set the bowl aside to marinate while you prepare the beans.<\/p>\n<p><em>To prepare the black beans:<\/em><\/p>\n<p>Warm the olive oil in a large saucepan over medium heat. Add the onions and a sprinkle of salt. Cook, stirring occasionally, until the onions have softened and are turning translucent, about 5 to 8 minutes. Add the cumin and cook for about 30 seconds while stirring. Pour in the beans and 1\/3 cup water. Stir, cover and reduce heat to simmer. Cook for 5 minutes, then remove the lid and use the back of a fork to mash up at least half of the beans. Remove from heat, season generously with salt and pepper, to taste, and cover until you\u2019re ready to serve.<\/p>\n<p><em>To warm the tortillas:<\/em><\/p>\n<p>Heat oven to 200 degrees Fahrenheit. Place the tortillas on a baking sheet and place in the oven for about 5 minutes, or until they are warm to the touch.<\/p>\n<p><em>Put it all together:<\/em><\/p>\n<p>Spread black beans down the middle of each tortilla. Top the beans with corn salad.
