This vegan dish makes for a healthy lunch on-the-go or even a dinner entr\u00e9e.<\/p>\n<h4><strong>What we liked:<\/strong><\/h4>\n<ul>\n<li>Everything about the recipe!<\/li>\n<li>The avocado lime sauce was delicious and was a perfect topping on the burrito bowl<\/li>\n<li>The spices added great flavor<\/li>\n<\/ul>\n<h4><strong>What we would change:<img loading=\"lazy\" src=\"\/scnc\/files\/2019\/03\/2-1.jpg\" alt=\"\" class=\" wp-image-4727 alignright\" width=\"378\" height=\"283\" srcset=\"https:\/\/www.bu.edu\/scnc\/files\/2019\/03\/2-1.jpg 1102w, https:\/\/www.bu.edu\/scnc\/files\/2019\/03\/2-1-636x477.jpg 636w, https:\/\/www.bu.edu\/scnc\/files\/2019\/03\/2-1-768x576.jpg 768w, https:\/\/www.bu.edu\/scnc\/files\/2019\/03\/2-1-1024x768.jpg 1024w\" sizes=\"(max-width: 378px) 100vw, 378px\" \/><\/strong><\/h4>\n<ul>\n<li>Nothing! There were no complaints about the recipe<\/li>\n<li>Feel free to adjust the seasoning based on your preferences<\/li>\n<li>Additional toppings can be added based on your preferences too, such as Greek yogurt, sour cream, or chicken!<\/li>\n<\/ul>\n<h4><strong>The nutrition in these bowls:<\/strong><\/h4>\n<ul>\n<li>The beans are loaded with fiber, iron, and protein<\/li>\n<li>Avocado and olive oil provide healthy fats<\/li>\n<li>Garlic and onions are anti-inflammatory<\/li>\n<li>Brown rice is a whole grain with fiber<\/li>\n<li>Tomatoes have antioxidants and vitamin C<\/li>\n<\/ul>\n<h3><strong>Sargent Choice DIY Burrito Bowl<\/strong><\/h3>\n<p>Recipe modified from Oh She Glows<br \/>\nYield: ~ 3 servings<\/p>\n<h4><strong>Ingredients:<\/strong><\/h4>\n<p><strong>For the Spicy Black Beans: <img loading=\"lazy\" src=\"\/scnc\/files\/2019\/03\/1-1.jpg\" alt=\"\" class=\" wp-image-4728 alignright\" width=\"294\" height=\"294\" srcset=\"https:\/\/www.bu.edu\/scnc\/files\/2019\/03\/1-1.jpg 584w, https:\/\/www.bu.edu\/scnc\/files\/2019\/03\/1-1-100x100.jpg 100w\" sizes=\"(max-width: 294px) 100vw, 294px\" \/><\/strong><br \/>\n2 tablespoons olive oil<br \/>\n1 cup diced onion<br \/>\n4 medium garlic cloves, minced<br \/>\n\u00be to 1 cup chopped fresh tomatoes<br \/>\n1 teaspoon chili powder<br \/>\n1 teaspoon garlic powder<br \/>\n1 teaspoon dried oregano<br \/>\n\u00bc teaspoon cayenne pepper (optional)<br \/>\n\u00bd teaspoon salt<br \/>\n2 \u00bd tablespoons tomato paste<br \/>\n1 (14-ounce) can black beans, drained and rinsed<br \/>\n\u00bd cup unpacked cilantro, large stems removed and finely chopped<\/p>\n<p><strong>For the Avocado-Lime Sauce (makes heaping \u00bd cup)<\/strong><br \/>\n1 large garlic clove<br \/>\n1 large avocado, pitted<br \/>\n1 tablespoon fresh lime juice<br \/>\n1 tablespoon water<br \/>\n\u00bc teaspoon salt<\/p>\n<p><strong>For serving: <\/strong>1 cup dry brown rice cooked according to package directions, favorite jarred salsa. Optional toppings: plain Greek yogurt, sliced green onion.<\/p>\n<h4><strong>Directions:<\/strong><\/h4>\n<ol>\n<li>Heat the oil in a large skillet. Add the onion and saut\u00e9 until soft, about 5 minutes. Add the garlic and heat for minute or so.<\/li>\n<li>Stir in the chopped tomatoes, chili powder, garlic powder, oregano, cayenne (if using, and \u00bd teaspoon of salt. Continue cooking for another 3-5 minutes until the tomato softens.<\/li>\n<li>Add the tomato paste and drained and rinsed black beans. Cook for a few more minutes until heated through. Stir in the cilantro. You can leave this mixture over low heat until ready to serve or simply turn off the heat and reheat before serving.<\/li>\n<li>For the avocado-lime sauce: Mince the garlic clove in a food process. Next add the avocado, lime juice, water, and salt. Process until smooth.
