Whether it\u2019s a chilly night or you\u2019re feeling down with a cold, this soup can warm you up! This soup is packed with nutrients and is also vegan.<strong><\/strong><\/p>\n<h4><strong>What we liked:<\/strong><\/h4>\n<h4><strong><img loading=\"lazy\" src=\"\/scnc\/files\/2019\/02\/4.jpg\" alt=\"\" class=\" wp-image-4696 alignright\" width=\"315\" height=\"187\" srcset=\"https:\/\/www.bu.edu\/scnc\/files\/2019\/02\/4.jpg 721w, https:\/\/www.bu.edu\/scnc\/files\/2019\/02\/4-636x376.jpg 636w\" sizes=\"(max-width: 315px) 100vw, 315px\" \/><\/strong><\/h4>\n<ul>\n<li>So many vegetables!<\/li>\n<li>The nutritional yeast added a cheesy flavor<\/li>\n<li>The spices added a lot of great flavor to this dish<\/li>\n<li>This recipe makes a lot of soup and everyone was able to take home leftovers and save for lunch for the week!<\/li>\n<\/ul>\n<h4><strong>What we would change:<\/strong><\/h4>\n<ul>\n<li>The tofu was in the oven for a long time but did not get crispy enough. We suggest to pat it dry thoroughly before placing it in the oven<\/li>\n<li>To enhance the flavor more, we recommend using a vegetable broth base rather than just water<\/li>\n<\/ul>\n<h4><strong>The nutrition: <img loading=\"lazy\" src=\"\/scnc\/files\/2019\/02\/3.jpg\" alt=\"\" class=\" wp-image-4697 alignright\" width=\"275\" height=\"216\" \/><br \/>\n<\/strong><\/h4>\n<ul>\n<li>Protein from the tofu<\/li>\n<li>Whole grains and fiber from the whole wheat noodles<\/li>\n<li>Vitamin A from the carrots<\/li>\n<li>Healthy fats from the olive oil<\/li>\n<li>Vitamin B12 from the nutritional yeast<\/li>\n<li>Vitamin K, A, and C from the kale<\/li>\n<\/ul>\n<h3><strong>Sargent Choice Vegetable Noodle Soup<br \/>\n<\/strong><\/h3>\n<p>Recipe modified from 101 Cookbooks<br \/>\nYield: 6 servings<\/p>\n<h4><strong>Ingredients:<img loading=\"lazy\" src=\"\/scnc\/files\/2019\/02\/2.jpg\" alt=\"\" class=\" wp-image-4699 alignright\" width=\"304\" height=\"405\" \/><\/strong><\/h4>\n<p>12 ounces extra-firm tofu, pat dry with paper towels, cut into \u00bc-inch cubes<br \/>\n1 \u00bd tablespoons olive oil<br \/>\n4 cloves garlic, chopped<br \/>\n1 medium onion, finely chopped<br \/>\n1 cup carrots, finely chopped<br \/>\n2 cups celery, finely chopped<br \/>\n\u00bc teaspoon dried turmeric<br \/>\n1 tablespoon thyme (fresh or dried)<br \/>\n1 teaspoon oregano (fresh or dried)<br \/>\n1 bay leaf<br \/>\n1 teaspoon salt<br \/>\nPepper to taste<br \/>\n1 \u00bd tablespoons nutritional yeast 8 cups water<br \/>\n2 cups finely chopped kale, stems removed<br \/>\n12 ounces dried whole wheat pasta, cooked per package instructions<\/p>\n<h4><strong>Directions:<\/strong><\/h4>\n<ol>\n<li>Boil water in large pot and cook pasta according to package directions. Any whole wheat pasta is fine (angel hair pasta broken into shorter segments is one suggestion).<\/li>\n<li>Meanwhile, heat oven to 375\u2070F. Toss the tofu with \u00bd tablespoon olive oil, place on parchment lined baking sheet, and bake 15 minutes, or until slightly golden in color. Transfer the tofu to a bowl and set aside.<\/li>\n<li>Heat the remaining 1 tablespoon of olive oil in a large soup pot over medium high heat. Add the garlic, onion, carrots, and celery, and saut\u00e9 for 10 minutes or so, just until the onions start to take on a bit of color. Add the turmeric, thyme, oregano, bay leaf, 1 teaspoon salt, nutritional yeast, and some freshly ground black pepper.<\/li>\n<li>Add the cooked pasta, tofu, and kale.
