The combination of the colorful veggies and the aromatic onions, garlic, and spices made this a tasty and cozy meal to share with friends. With cauliflower, carrots, mushrooms, tomatoes, peas, and kale, the curry contains a rainbow of vegetables, making it an easy and delicious way to get lots of vitamins and minerals in one bowl.<\/li>\n<li>The chickpeas and peas are great sources of protein and fiber, helping to keep you feeling full. (We think it\u2019s a great meal for midterm season!)<\/li>\n<li>Using coconut milk instead of cow&#8217;s milk is an easy way to make the curry creamy but still vegan.<\/li>\n<\/ul>\n<h4>What We Liked:<\/h4>\n<ul>\n<li>The vegetables provided a variety of textures, and the onions and garlic provided extra flavor, too.<\/li>\n<li>Cooking was very easy! You can\u2019t go wrong with spices in this recipe!<\/li>\n<li style=\"text-align: left;\">For an added crunch, we brainstormed adding crispy chickpeas to this recipe. Give it a try!<\/li>\n<li style=\"text-align: left;\">This curry recipe has so many possibilities for adding different vegetables and beans, switching up the whole grains it\u2019s served with, and experimenting with spices. Make it your own\u2014it\u2019s sure to become a new favorite.<\/li>\n<\/ul>\n<h3><strong>Sargent Choice Vegan Thai Coconut Vegetable Curry<\/strong><\/h3>\n<p>Recipe modified from https:\/\/thekitchengirl.com<br \/>\nYield: Approximately 6 servings<\/p>\n<h4>Ingredients:<\/h4>\n<p>2 tablespoons olive oil<br \/>\n2 green onions, chopped<br \/>\n4 cloves garlic, finely grated<img loading=\"lazy\" src=\"\/scnc\/files\/2018\/11\/IMG_1249-e1541694931808.jpg\" alt=\"\" class=\" wp-image-4567 alignright\" width=\"257\" height=\"343\" srcset=\"https:\/\/www.bu.edu\/scnc\/files\/2018\/11\/IMG_1249-e1541694931808.jpg 3024w, https:\/\/www.bu.edu\/scnc\/files\/2018\/11\/IMG_1249-e1541694931808-477x636.jpg 477w, https:\/\/www.bu.edu\/scnc\/files\/2018\/11\/IMG_1249-e1541694931808-768x1024.jpg 768w\" sizes=\"(max-width: 257px) 100vw, 257px\" \/><br \/>\n1 cup cauliflower<br \/>\n1 cup carrots<br \/>\n1 cup mushrooms<br \/>\n3 tablespoons curry paste<br \/>\n1 15-ounce can chickpeas (drained)<br \/>\n1 15-ounce can diced tomatoes (drained, but keep juice to adjust consistency later, if needed)<br \/>\n1 cup frozen peas<br \/>\n1 15-ounce can light coconut milk<br \/>\n\u00bd teaspoon Kosher salt<br \/>\n2 cups fresh kale, chopped<br \/>\nCooked brown rice<\/p>\n<h4>Directions:<\/h4>\n<ol>\n<li>In a 3-quart skillet or pot, heat olive oil over medium heat.<\/li>\n<li>Add onions, garlic, cauliflower, carrots, and mushrooms all at once; continue to heat and stir until vegetables became fragrant and slightly soft (about 4 minutes).<\/li>\n<li>Add curry paste; saut\u00e9 a few minutes, stirring as needed.<\/li>\n<li>Add chickpeas, tomatoes, peas, coconut milk, and salt; increase heat to bring to boil then reduce heat to low and simmer for 15 minutes (leave uncovered). NOTE: If you feel more liquid is needed, add juice from the canned tomatoes.<\/li>\n<li>Add kale; cover and simmer long enough to wilt (about 2 minutes).<\/li>\n<li>Serve over brown rice.
