Preparing this dish was really nostalgic for me because this recipe is similar to one my mother and I used to make back when I lived at home.<\/p>\n<p>This recipe calls for onions.\u00a0 Unfortunately nobody readily volunteered to chop them for fear of crying from the sulfur fumes.\u00a0 We started sharing tips to avoid the tears. \u00a0See below for some tear-free tips (and the delicious recipe):<\/p>\n<p><u>Tips for before chopping an onion<br \/>\n<\/u><\/p>\n<ol>\n<li>Microwave the onion prior to chopping<\/li>\n<li>Refrigerate the onion prior to chopping\u00a0 <sup><br \/>\n<\/sup><\/li>\n<li>Rub lemon juice on the blade of your knife<\/li>\n<li>Cut out the onion\u2019s bottom core<\/li>\n<li>Use sweet onions when possible such as Vidalia onions<\/li>\n<\/ol>\n<p><u>Tips while chopping an onion<br \/>\n<\/u><\/p>\n<ol>\n<li>Cut the onion under water or while running water over the onion <sup><br \/>\n<\/sup><\/li>\n<li>Cut the onion with the root intact<\/li>\n<li>Run a fan nearby or cut the onion under a vent<\/li>\n<li>Use a very sharp knife<\/li>\n<li>Wear goggles<\/li>\n<li>Light a candle nearby<\/li>\n<\/ol>\n<p><strong>Sargent Choice Kale and White Bean Potpie with Chive Biscuits<br \/>\n<\/strong><em>Recipe from Eating Well<\/em><strong><br \/>\n<\/strong>Yield: 6 servings<\/p>\n<p><strong>Ingredients:<img loading=\"lazy\" src=\"\/scnc\/files\/2017\/03\/Kale-Soup.png\" alt=\"Kale Soup\" class=\"wp-image-4051 alignright\" height=\"220\" width=\"306\" \/><br \/>\n<\/strong>2 tablespoons extra-virgin olive oil, + 2 teaspoons, divided<br \/>\n1 cup chopped onion<br \/>\n\u00bd cup chopped carrot<br \/>\n\u00bd cup chopped celery<br \/>\n3 cloves garlic, minced<br \/>\n2 teaspoons chopped fresh thyme or \u00be teaspoon dried<br \/>\n1 teaspoon chopped fresh rosemary or \u00bc teaspoon dried<br \/>\n8 cups chopped kale, stems removed (1 small to medium bunch)<br \/>\n\u00bc cup white whole-wheat flour<br \/>\n3 cups low-sodium vegetable broth<br \/>\n1 15-ounce can white beans, rinsed<br \/>\n\u00bd teaspoon kosher salt<br \/>\n\u00bd teaspoon ground pepper<\/p>\n<p><strong>Biscuits:<br \/>\n<\/strong>1 cup white whole wheat flour<br \/>\n1 teaspoon baking powder<br \/>\n\u00bc teaspoon baking soda<br \/>\n\u00bc teaspoon kosher salt<br \/>\n\u00bc teaspoon ground pepper<br \/>\n3 tablespoons cold butter, cut into small pieces<br \/>\n3 tablespoons minced fresh chives<br \/>\n\u00bd cup cold buttermilk<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 350\u00b0F. Coat a 10-inch cast-iron skillet (or similar-size 2\u2013quart baking dish) with cooking spray.<\/li>\n<li>Heat 2 tablespoons oil in a large pot over medium heat. Add onion, carrot and celery and cook, stirring occasionally, until the vegetables are soft, 4 to 6 minutes. Add garlic, thyme and rosemary; cook, stirring, until fragrant, about 30 seconds. Add kale; cook stirring often, until tender and wilted, 3 to 5 minutes.\u00a0 Sprinkle with \u00bc cup flour and cook, stirring, for 30 seconds.\u00a0 Stir in broth, increase heat to high and bring to a boil.\u00a0 Reduce heat to a simmer and cook, stirring, until thickened, about 2 minutes.\u00a0 Stir in beans and \u00bd teaspoon each salt and pepper.\u00a0 Transfer the mixture to the prepared pan.<\/li>\n<li>To prepare biscuits: Whisk flour, baking powder, baking soda, salt and pepper in a large bowl. Using a pastry blender or your fingertips, cut or rub butter into the dry ingredients.\u00a0 Stir in chives.\u00a0 Add buttermilk and stir until just combined.\u00a0 Form the dough into 6 biscuits and place on top of the vegetable mixture.\u00a0 Lightly brush with the remaining 2 teaspoons oil.\u00a0 Place the potpie on a baking sheet.
