{"id":3306,"date":"2016-06-06T21:20:49","date_gmt":"2016-06-07T01:20:49","guid":{"rendered":"https:\/\/www.bu.edu\/scnc\/?p=3306"},"modified":"2016-06-06T21:20:49","modified_gmt":"2016-06-07T01:20:49","slug":"mediterranean-chicken-scampi","status":"publish","type":"post","link":"https:\/\/www.bu.edu\/scnc\/2016\/06\/06\/mediterranean-chicken-scampi\/","title":{"rendered":"Mediterranean Chicken Scampi"},"content":{"rendered":"<h4>Ingredients<\/h4>\n<p>5 Tbsp olive oil<br \/>\n1\/2 medium onion, finely chopped<br \/>\n1 garlic bulb &amp; 1 jalape\u00f1o pepper, minced<br \/>\n14.5 oz low-sodium, fat free chicken broth<br \/>\n2 Tbsp fresh lemon juice<br \/>\n1\/3 cup white wine<br \/>\n1 \u2013 2 tsp crushed red pepper<br \/>\n1 tsp ground black pepper<br \/>\n1 tsp salt<br \/>\n2 \u2013 3 tsp oregano<br \/>\n~35 fresh basil leaves, chopped<br \/>\n1 Tbsp cornstarch mixed with 1 Tbsp water<br \/>\n3 broccoli crowns, small florets<br \/>\n1 bunch fresh asparagus, 3-inch spears<br \/>\n1 medium tomato, chopped<br \/>\n1.3 lbs boneless, skinless chicken breast, bite sized pieces<br \/>\n1 box (14 oz) whole wheat penne<br \/>\n2-4 Tbsp fresh parsley, chopped (optional)<\/p>\n<h4>Directions<\/h4>\n<p><strong>1.<\/strong> Boil 6 cups water in a large pot. 5 minutes before step #5, add penne. Cook until al dente (firm to bite), ~ 10-12 minutes. Remove from heat and drain.<\/p>\n<p><strong>2.<\/strong> Heat oil in large nonstick skillet on medium-high heat. Add onions, garlic, and jalape\u00f1o peppers. Saut\u00e9 until soft.<\/p>\n<p><strong>3.<\/strong> Add chicken pieces. Add chicken broth, white wine, and lemon juice. Simmer until chicken is cooked.<\/p>\n<p><strong>4.<\/strong> Add crushed red pepper, black pepper, salt, oregano, and fresh basil. Stir in cornstarch slurry to thicken.<\/p>\n<p><strong>5.<\/strong> Add tomatoes, asparagus, and broccoli. Cover. Cook ~ 4-5 minutes (vegetables should be slightly crunchy.) Remove from heat.<\/p>\n<p><strong>6.<\/strong> Toss pasta and sauce together.
