Shanghai's cuisine is a blend of two cuisines, Benhang and Haipai. It features fresh meat, vegetables, and seafood, like fish, shrimps, and crabs. They have a lot of methods, like steaming, braising, stewing, stir-frying, quick-frying, deep-frying, boiling, marinating, smoking and roasting. Also, Shanghai Cuisine has become influenced by Cantonese Cuisine. The foods are now less oily and more delicate with the use of higher quality and expensive ingredients.
