Spicy Pickled Turnip and Sweet Onions

Ingredients: Bulbs, Sweet Onion and Hot Peppers

Wash and peel turnips, if necessary. Peel and cut onion in 1/8th or smaller depending on size, slice hot peppers and remove seeds. Place all in glass jar and cover with pickling brine. Store covered in refrigerator at least two days and up to two months.

Pickling Brine:

¾ c White Vinegar
½ Water
2 tbsp Honey
1 tbsp. Sugar
1 tsp Mustard Seed
½ tsp Kosher Salt

Bring all ingredients to a simmer pour over vegetables.

New England Sugar Beet Salad

Ingredients: Kale, Spinach, Turnip Tops

Peel (use gloves) and grate beets into a bowl, toss with a few tbsp of Apple Cider Vinaigrette (recipe below), hold. Wash and dry kale, spinach and turnip tops. In large bowl toss greens with a small amount of Apple Cider Vinaigrette. Plate greens and top with grated dressed beets.

Apple Cider Vinaigrette
¼ c Apple cider
¼ c White Vinegar
½ tsp Salt
¼ tsp black pepper
1 tsp Dijon Mustard
1 tbsp. Honey
½ c Extra Virgin Olive Oil

Whisk cider, vinegar, salt, pepper, mustard and honey until well blended. While whisking, drizzle in olive oil to create a temporary emulsion.
