It takes a small army to prepare and serve the 3,000 breakfasts, 5,000 lunches, and 5,000 dinners that BU’s Dining Services manages in its three main dining halls each day. Add to that the 40,000 customers served in the George Sherman Union Food Court every week, and it’s easy to understand why it takes 550 dining staff and another 800 student staff to make sure campus dining facilities run smoothly.
It’s a nearly 24-hour-a-day operation. Pastry chefs are among the first to arrive, beginning work around 4 a.m. And on weekends, the last staffers often don’t punch out until nearly 3 a.m.
Video producer Jason Kimball spent many an early morning and late night shooting at West Campus, the GSU, Warren Towers, and 100 Bay State Road to bring you the sights—and sounds—of BU’s Dining Services operation.
