Make a Difference Monday
Make a Difference Monday is a special meal at breakfast, lunch and dinner in residential dining halls, held each week to celebrate foods with a lower carbon footprint. We feature more vegetarian options, sustainable seafood, local and seasonal fruits and vegetables, organic, third-party certified foods and we abstain from serving beef and pork. We have also partnered with Sargent Choice, a nutrition program created by Sargent College, to serve more of their certified-healthy dishes on these days.

- Livestock production is responsible for 20% of the world’s greenhouse gas emissions.
The goal is to educate students about eating a diet that is better for both them and the environment. We always name the farms and locations posted on station signs so that students know where the ingredients are coming from. Eating seasonally puts one in touch with their food sources.
