Heart Healthy Oatmeal Raisin Cookies

Makes approximately 40 cookies


1 cup whole-wheat flour
3 cups old fashioned oats
1 tsp baking soda
1/2 tsp cinnamon
1/2 cup light butter, salted
1/3 cup light olive oil
1/4 cup granulated sugar
1/2 cup packed brown sugar
2 tsp vanilla extract
2 large eggs
1/2 cup ground flax seeds
1 cup raisins


1. Preheat oven to 375 degrees. Combine flour, flax seeds, baking soda and cinnamon in small bowl.

2. Beat together butter, sugars, oil and vanilla extract in large mixing bowl until creamy.  Add eggs one at a time, beating well after each addition.  Gradually beat in flour mixture.  Stir in oats and raisins.

3. Drop by rounded tablespoons onto ungreased baking sheets.

4. Bake for 8-10 minutes.  Cool on baking sheets for 2 minutes; remove to wire racks.
