Vin Santo: Taste-Traveling Back to the Italian Renaissance, with Bill Nesto

Vin Santo is a traditional Tuscan specialty wine made from semi-dried grapes. It remains the one wine type that has remained unchanged since the Italian Renaissance. It is nurtured on mother yeast strains that have been preserved in families for generations, if not centuries. The wine is matured for many years in unheated attics and lofts before the intensely flavored liquor is transferred by hand from old, small casks made of cherry, chestnut, acacia, and oak wood into small bottles. Between sips of Vin Santo, morsels of pecorino topped with jam and honey, and Tuscan cantuccini, Master of Wine Bill Nesto will explain the who, how, and where of these special wines.
