Introduction to Hospitality Marketing
Group Term Assignment
The purpose of this exercise is to familiarize you with the marketing strategizing that must happen when a new restaurant is being developed. Imagine you have a friend who is interested in opening a restaurant somewhere in Boston, Brookline, or Cambridge and wants your help finding a site and evaluating the market. At a minimum, your analysis should include the following:
- Where specifically should the restaurant be located?
- What is the approximate number of each of the following nearby market segments: office workers, local residents, tourists, other?
- What are the eating-out characteristics of each of these market segments?
- What are the names and characteristics of the current competing restaurants, key and other?
- What are the characteristics of the proposed restaurant?
Each group should develop a market research plan for how it proposes to gather the information it will need for the project. This plan should include the specifics of the information needed and its sources. Some of the information will require area and/or restaurant visits; some may require interviewing individual restaurant customers.
