Serves 4-6

4¼ cups all-purpose flour
1 tsp. ground cinnamon
½ tsp. each:
ground cloves
ground ginger
ground nutmeg
1 cup powdered sugar
½ cup butter, softened
2 tsp. baking powder
2 large eggs, beaten
1 cup honey
2 Tbs. orange juice

TO PREPARE:

Preheat oven to 350 degrees F. In a large bowl sift flour, spices, sugar, and baking powder. Cut in butter slices. Mix well. In another bowl, beat eggs until creamy, and add honey and orange juice, continuing to beat until mixture is light and smooth. Fold into the flour, mixing well, until a soft dough is formed.

Flour a work surface and roll out the dough into a very thin sheet. Cut dough into rounds with cookie cutter or juice glass, and place on an ungreased cookie sheet.

These soft, cake-like cookies may be glazed by brushing each one with a mixture of beaten egg, sugar to taste, and water — or sprinkle a little cinnamon-sugar on top. Bake 10 to 12 minutes, or until lightly browned.
