Makes 1 standard loaf

500 g. (about 18 oz.) of mixed cake fruit mix (currants, raisins, sultanas, etc.)
1 ½ cups black tea
2 large eggs
1 cup sugar
500 g. (about 2 ¼ cups) self-rising flour
2 Tbs. butter

TO PREPARE:

Soak fruit mix overnight in tea.

Whisk together eggs and add sugar, flour, and butter. Mix together with fruit mixture and bake in a loaf tin at 350 degrees F. for about 1 hour.
