Serves 4-6

1 lb. red beans (fresh)
1/3 lb. walnuts, finely chopped
2 medium onions, finely chopped
1 bunch parsley, finely chopped
1 bunch dill, finely chopped
2 mint leaves, finely chopped
10 cups water
salt and pepper to taste

TO PREPARE:

Soak beans in cold water for two hours prior to cooking. Discard water. In a soup pot boil ten cups fresh water, then add beans. Keep on a medium flame until the beans are tender. With the back of a wooden spoon mash some of the beanson the side of the soup pot. Add walnuts. Add onions, salt, and pepper. and continue to cook for 10 minutes. Add parsley, dill, and mint, and continue to cook for another 5 minutes. Serve immediately.
