Merroir/Terroir at Island Creek Oyster Bar
Island Creek Oyster Bar sommelier Tom Schlesinger-Guidelli and professional oyster farmer Shore Gregory lead us through a tasting of various wines and oysters to explore the flavor characteristics that result from their regions of origin. Just as the terroir of a wine (the geography, geology, and climate of its origin) is indicative of its flavor, the merroir of anoyster (its marine surroundings) will greatly influence its taste. When those terroir and merroir flavors align, the perfect wine and oyster pairing is born. Tom Schlesinger-Guidelli is the wine director and general manager of the Island Creek Oyster Bar. Shore Gregory is executive director of Island Creek Oyster Farm and co-owner of the Island Creek Oyster Bar.
