Civilizing the Savages: Pairing Wild Foods with Sauvignon


“Sauvignon” is derived from the French word sauvage, meaning “savage.”

Together Bill Nesto, Master of Wine, and Victor Beguin, executive chef for

Boston University's Sargent Center in New Hampshire, present a tasting

menu which will pair Cabernet Sauvignons and Sauvignon Blancs from

around the world with cuisine based on wild ingredients.
