Any given week, the following vegetables are available at BU Dining Services: Salad Bar:
Tomato, Cucumber, Red or Green Pepper Carrots, Bean Sprouts, Alfalfa Sprouts, Spinach, Romaine Lettuce, Iceberg Lettuce, Celery, Zucchini, Yellow, Squash, Broccoli, Cauliflower, Beets, Button, Mushrooms, Red Onion.
Other vegetables also available are:
Butternut squash, Eggplant, Shiitake Mushrooms, Acorn Squash, Leek, White Onion, Cabbage, Sweet Potato, Avocado, Corn, Baby Corn, Broccoli, Rabe, Water Chestnuts, Green Onion, Pea Tendrils, Asparagus, Bamboo Shoots.
