Cheese Certificate Program, with Ihsan Gurdal

This in-depth exploration of cheese varieties and production will look at an international and local array of cheeses, taught by Formaggio Kitchen’s own Ihsan Gurdal. Students will learn the techniques used in making all types of cheese from the softest washed-rind to Parmiggiano Romano. Gurdal will share stories about visiting cheesemakers around the world, the vast work they put into their craft, and the hurdles he has jumped though to import international product. Every class will include cheese tastings paired with condiments and wine or beer. The final class will be a tour of local dairy farms that specialize in cheesemaking. Successful completion of the course and final exam leads to a certificate from Boston University.
