The Construction of Nueva Cocina Peruana
Peru has emerged from the shadows of its colonial past and into the twenty-first century with a reimagined self-image. The country’s reconstruction can be observed through its cuisine; specifically the new fusion cuisine known as nueva cocina peruana, a result of the synthesis between Peru’s indigenous agrobiodiversity and classic European cooking techniques. MLA Gastronomy candidate Gabriel Mitchell will discuss his latest research from the field on the traditional and new cuisines of Peru.
