Vegetarian Nutrition and Cooking

This class is for both vegetarian and non-vegetarians who are interested in learning more about how to achieve a balanced nutritious vegetarian or vegan diet. Students will learn what their individual nutritional needs are and how to ensure they are meeting their vitamin and mineral requirements. Emphasis in class will be placed on how students can play their part in making sustainable food choices. Students will also learn how to cook vegetarian proteins via several in-class cooking demonstrations. This class is for non-nutrition majors only.
